Does homeowners insurance cover our refrigerator if it got hit by lightning? And what would the process be?

No it would not cover it unless it was under a special endorsement. which means it would be specifically covered in the policy
Usually yes, and will also cover the food lost due to spoilage. Remember to check your policy for your deductible. You should check all the other electrical components in your home . Usually lightning doesn’t pick on just one item in the home, but you could be right.
