The person paid in cash. I have seen that you can submit pictures or video, a remote, what about witnesses?

Yes, you can. You simply make a list of items, and their cost.
Give it to the insurance agent. Make sure a police report is filed first to give it credibility.
Sure they’ll pay out. As an adjuster, you can’t expect everyone to keep EVERY receipt for every item in their home. Make sure you file the police report first though, because most policies will have an exclusion that won’t pay out if you didn’t file a report.
file a police report first. then file the claim. they will pay you actual cash value of the items and once you replace them and submit receipts showing you have done so, they will pay you the difference to replacement cost of the items.
